Finca Xaconero or “The lands of the January ponds”. The first documents that refer to cultivation on our estates date back to the 16th century.
The documents tell how it rained so much during the months of September and October then, the land retained the water until January, hence the name. “The lands of the January Ponds”.TECNICAL CHARACTERISTICS:
Variety: 90% old vineyard Monastrell and a small contribution of 5% Shiraz and 5% Garnacha Fina, from our vineyard “Finca el Chaconero” in Villena at the Cabezo de la Virgen” area.
Vinification: Fermented in small stainless-steel tanks at low temperature (25oC) with indigenous yeast from our vineyard. A lot of whole grain and light extraction in the rebounded, looking for balance and harmony. Post-fermentation maceration of 5 days.
Ageing: This wine has been affined for 12 months in French Allier oak. These barrels are medium-light toasted to fully respect the fruit in the wine. This wine is cultivated in a sustainable way with the environment, with native Mediterranean varieties that reflect our mountains, climate, our sun and our character.
ORGANOLEPTIC CHARACTERISTICS:
High layer wine Ruby red colour with garnet sparkles.
In olfactory phase it transports us to the fresh Mediterranean, with rosemary, rockrose, lavender, sage and the beautiful refreshing aroma of laurel leaves and pine.
In the mouth it is powerful and at the same time harmonious. It has many fine and sweet tannins that will make it live for many years and the barrel that elegantly accompanies the entire weight of the fruit.
Great long and harmonious post-taste where you can see power and elegance united at the same time.

Foothills at about 900 m altitude. Sandy limestone soils. Organic agriculture following biodynamic guidelines and maximum respect for nature. Organic and sustainable viticulture. Manual harvest in 10 kg boxes and directly into the cold room to lower the grapes as quickly as possible to 2 degrees.
Preparation and Aging: After 2 days of cold maceration of the whole grapes, we proceed to crushing and partial destemming, passing the must with its skins to a stainless steel tank. We obtain a spontaneous fermentation only using its own natural yeasts and macerating for about 30 days with the skins. We put the wine into 500 and 600 L French Burgundy barrels for aging for 9 months.Objective: to continue with our philosophy of making fresh and pleasant wines while seeking an honest expression of certain rustic varieties that blend together very well and in harmony.
Recommendations: Ideal wine to accompany all the gastronomy that autumn/winter offers and that can also be very pleasant served chilled in spring/summer. A very different and surprising wine.

Vermell is the simplest of our three old reds. The old ones, unlike the classic ones, are only made with native varieties and are only raised in clay jars. Vermell is made with the grapes we have in the lowest part of our estate in Les Alcusses. Below, the soil is more fertile and the yields are higher and this allows us to obtain a very affordable wine but not devoid of character. We harvest rather early to put the emphasis on fresh red fruit. Short and gentle maceration at low temperature helps us avoid heaviness and makes the wine more fluid and easier to drink. The aging in jars gives it elegance without taking away its liveliness. Its first vintage was 2012 and its image is tinted with a fresh red color because that is what we want this wine to be like. Vermell is our approach wine to this pure, simple and sincere landscape.
Preparation: Manual harvest in 15 kg boxes, 100% destemmed, native yeasts, malolactic fermentation in stainless steel, aging for 6 months in 2800 liter clay jars / 60,000 750 ml bottles.
Vineyard: Partida de Les Alcusses, Moixent, Terres dels Alforins D.O.P. Valencia / 600 meters above sea level / sandy and clay soils / 20-40 year old vines / certified organic farming.

Its elaboration process includes maturation in ceramic amphorae, made of clay from Villarrobledo cooked in old wood ovens.

Our variety Forcallat is 55 years old and planted ungrafted in sandy soil in the westernmost part of Fontanars, 700 metres above sea level. The 2014 vintage saw cool spring temperatures and moderate rainfall. As of May we had one of the most severe droughts in the last 20 years, with no rain until November, so it was a very dry year. With no irrigation, we increased our tillage work so as to maintain the scarce spring soil moisture, thus bringing the grape harvest forward 12 days with an alcohol content by volume of 14%.
In our opinion, this is a good vintage for the Forcallat, with ripe seeds and slightly lignified stems.Winemaking information: Fermentation with indigenous yeast in 2,000-litre stainless steel tanks with 10% stems and gentle pumping-over.
Maceration at 26 ºC for 21 days.
Ageing: 8 months in 500-litre used French oak barrels. - Origin

Wine description
After the monastrell, the second autochthonous variety from Els Alforins Valley, is the Garnacha tintorera (Alicante bouschet). Within this wine. we have tried to look for the maritime side of this grape variety, looking for a soil which keeps the freshness and acidity. The soil suited better it was the single vineyard of ruby colour soil due to the high content in iron. . In order to respect this personality, we decided to elaborate the wine as the Friars (los Frailes) did at the Estate, limiting to minimum the intervention at the winery and using the same concrete deposits and anfors as the friars used a long time ago.Soils
Single vineyard called “La casa de aperos” (“the house of tools”). 650 meters over sea-level. It is ruby colour- limestone soil located in the slope of the mountain highly sensitive to erosion. Soils very rich in iron, thus oxidation changes the limestone colour into a ruby-colour: this effect is known as rubification. These soils are deeper and more porous than the dolomites ones, thus allowing larger storage of water. This is essential for a grape variety as Garnacha tintorera no so resistant to draught, as the Monastrell. Aged of the vineyards 13 year old.Vinification
The harvest is manual. The work at the winery is limit to a minimum: wild yeasts, light battonages, minimum amount of sulphites and light filtration. 50% are whole grapes. Alcoholic and malolactic fermentation in old concrete deposits from the c. XVIII where the friars used to elaborate wine. Aging the wine for 10 months in old concrete deposits and anfors. - Origin

Red Crianza wine aged in new American oak barrels for 12 months, produced exclusively by mechanical and physical processes, without additives or preservatives.
VARIETY
Garnacha Tintorera, wine red elaborated with we obtain from our vineyard, dry farming and cup-shap crop and hand - picked, grown at an altitude of 900 m. The grapes are manually and carried to the winery so as not damage the fruit.
VINIFICATION
LThe grape variety is elaborated at its optimum ripening point. Manual harvest. the grape is destemmed and crushed with nitrogen protection. Pre-fermentation maceration at 10º C for two days to achieve a more selective extraction of aromas, color and tan nis in an aqueous medium (with the absence of alcohol during fermentation). avoiding the release of tannic and bitter substances.
Fermentation and maceration with the addition of selected yeasts in stainless steel tanks for two days at a controlled temperature of 25º C. Subsequent devatting and racking of the wort for malolactic fermentation in American oak barrels, remaining there for 12 months. Lightly clarified and filtered before bottling.
TASTING NOTES
Attractive and intense purple red color. Aromas of mature fruits with toasted and smoked notes from its ageing in barrel. On the palate it is smooth, unctuous, powerful, and tasty. balanced with mature tannins that provides robustness.
PAIRING
Accompanies well rice, pastas, patés, cheeses and all types of meat.

The finesse and elegance that Bodegas Ponce manages to give to its wines respecting the typicality of the grape, which is mostly Bobal. Bodegas Ponce is a family business founded in 2005 by Juan Antonio Ponce, who worked for Telmo Rodríguez in the beginning and who later decided to set up on his own with his brother and father and recover old Bobal vineyards in Manchuela. They work their own plots (17ha) and those rented, all the work is done in an artisanal way and the agriculture is based on biodynamic farming, an organic farming that takes advantage of the forces of nature to extract the best results from the harvests. This winery works with Bobal grapes from the D.O. Manchuela, bush-trained vines, up to 80 years old, and the vines are ungrafted (pre-phylloxera).

At Celler Pardas we have spent the last 20 years selecting old Sumoll vineyards from half Catalonia and making the Collita Roja and our Rosat de Sumoll from vineyards from North Penedès region and Anoia River basin’s vineyards. After many selections we have implanted our vineyards at the Can Comas property.
When it comes to the Sus Scrofa, it is all our fault. The election of the place, the kind of soil, the orientation, the rootstocks, the vegetal selection, kind of formation and pruning… Always with the minimum possible cultivation and an ecological and reasoned viticulture.
With delicate grape harvest and vinification, without any kind of aging, our will is to offer a natural, direct and honest Sumoll wine. The result is a wine festivity, pure fruit.
We have worked hard, just enjoy it.
Farming method: The main idea is to let the vines express as free as possible. That's the reason why we don't fertilizice in a classic way and we work with local grass covers. Neither herbicides, pesticides nor any other chemicals were used on any of our vineyards.

Harvesting method: 100% handpicked on 7-15-21th of September in plastic cases. Rigourous selection in the vineyard.
Winemaking: 50% Destemmed, crushed and filled the tanks by gravity. 50% whole-cluster. No industrial yeast used. Fermentation starts spontaneously in concrete tanks during 12 days at 22º. No finning agents used. No oak used at all. The wine was neither clarified nor cold stabilised.
Ageing: 3 months in concrete tanks before bottling.

Pale and bright white wine. Aromas of white flowers, bay leaf and green apple. Dry fruity, light and bright.
When the Miñano-Gómez family added Bodegas Monóvar to their wine project, they added white Riesling to their unique varieties. This grape, despite being typical of northern Europe, proved to be very productive and of high quality in the lands of the Vinalopó Valley. The good oenological work of the MGWines team managed to introduce this grape of universal prestige for the first time in the history of Alicante. The climatic conditions, rather dry inland in Alicante, made it necessary to place the vineyard on trellises and carry out controlled irrigation during spring and summer. The nine-hectare plot where it is cultivated combines fertile marl land with calcareous soils and its arrangement on a well-oriented and ventilated slope prevents the presence of diseases. We can say without a doubt that our Riesling is the southernmost in Europe.
Harvesting takes place towards the end of August and, after total destemming, it is fermented at low temperature for two weeks. By November the wine is perfect to be bottled and marketed at Christmas.
With this project, Bodegas Monóvar places itself at the forefront of the Spanish production of this very important variety and fulfills the dream of the people of Alicante of having a great grape and consequently a great white wine.
Unlike its German and French brothers, the Riesling from Bodegas Monóvar is dry, elegant and fruity, ideal for Mediterranean cuisine from the sea and in a hot and temperate climate. It is presented in an amber Rhin bottle which, due to its originality, makes it stand out from most whites.

The harvest is carried out at the optimum point of aromatic maturation, before reaching phenolic maturation to achieve greater freshness and aromatic potential in the wine. Made by hand and first thing in the morning, in perforated 15kg boxes, it allows maximum respect for the quality and integrity of the fruit
Development and aging
The clusters are transported directly to the pneumatic press where a long and gentle pressing is carried out, before undergoing a slight racking. After this clarification process, the must goes into stainless steel tanks to undergo alcoholic fermentation at a controlled temperature of 15-18ºC. Then this white wine remains with its lees and “batonnages” are made.
Organoleptic characteristics
Straw yellow color with greenish reflections. On the nose it is intense and very aromatic. Notes of white flowers, ripe fruit and tropical fruit stand out. When the glass is shaken, citrus and orange blossom notes develop that evoke a sensation of freshness. In the mouth, the wine is intense and fresh. The notes of the Moscatel variety suggest sweetness, but it is really a dry wine. It is unctuous and citrusy. The freshness provided by a generous acidity stands out. The end of the mouth is long, nothing fleeting, the floral and tropical sensations perceived in the nose by the Moscatel last.
Recommended pairing: It pairs very well with pasta, rice dishes, seafood and oriental cuisine.

ELABORATION
Singular elaboration looking for the maximum expression with the minimum intervention. The grapes are harvested by hand in boxes. Once cooled, the grapes are destemmed and placed whole in stainless steel tanks to ferment with the skins for twelve days at a controlled temperature. Before the alcoholic fermentation is completely finished, the wine is gently and lightly pressed to remove the gross lees.
BREEDING
Once fermentation is complete, the wine is aged on its lees for four months in 500-liter French oak barrels. The wine is clarified and filtered very lightly so that over time a slight precipitate may appear.

The grapes are de-stemmed and maceration of the skins for about two hours to extract greater volume in wine and greater aromatic potential. Then it proceeds to the pressing of the grape long and smooth.

Harvest
The 2019 harvest cycle was shorter than usual with a lack of rain during the collection which happened from 10th to 20thin September. The vineyards used in the production of this wine are 13 years old and since they were planted have been farmed organically. The production yields of our grapes in this harvest (kilograms / hectare) were from 6,000 to 8,000 kg / ha. This results in a higher concentration of the grape components and therefore a higher quality of the wine.
Winemaking
Maceration of the must with the skins is carried out for 6-12 hours and at a temperature of 6-8ºC. This causes a greater extraction of the aromatic and varietal components, as well as enhances the sensations in the mouth. The racking is long, increasing the contact of film substances with the must for more fruity aromas contribution. The fermentation takes place at low temperatures, 14-16ºC, which helps to maintain and intensify the varietal character. After the fermentation, the wines are kept for a period of time in contact with the fine lees, in order to increase the structural characteristics of the wine, providing fatty acids and wider and glyceric sensations in the mouth. The clarification in all our wines are made without any product from animal origin. .
Tasting
Yellow-green color with medium intensity. Clean, bright and well presented. High intensity, with a marked varietal character. Notes of green apple and citrus aromas (lime, grapefruit), which are complemented by peach, apricot and with pleasant floral nuances (hawthorn, acacia), well combined with a balsamic finish (fennel, hay and aniseed). Very well balanced with a fresh and crispy acidity. Very powerful with a good expression of Verdejo that lasts long. Retronasal with herbal and spicy aromas with a certain presence of citrus fruits (grapefruit and lime).

Vinification:
The 4 varieties from smallholding plots were harvested by hand and subsequently fermented in stainless steel tanks at a controlled temperature. Once the alcoholic fermentation was carried out, they were mixed in French oak barrels to undergo malolactic fermentation and aging for 12 months.Once we had the wine ready (Memòries) we transferred 250 liters to steel tanks, mixing it with aromatic herbs from the Aitana, Serrella and Mariola mountains, spices and sweetener, with gentle stirring for 45 days until later.

Olfactory Phase: Red and black fruits, citrus peel, fennel, cinnamon, sage, hints of caramel and toffee.
Taste Phase: Very sweet, but without cloying, reminiscent of a good artisan vermouth and different because its base comes from our red wine “Memories”, thus mixing the typical notes of the grapes with those of the aromatic and spicy herbs.
Summary: A very different, fun and daring vermouth, with the wine base of a red wine to drink as an aperitif or dessert, without the need for accompaniment.

In this idyllic spot the naturally soft water of the Alt-na-Frith burn is introduced to tender Scottish barley.
